recipe // bowties with tomatoes, sausage & cream.

This is probably one of my most favorite pasta dishes, EVER.  It’s very easy to make but it’s delicious & perfect for serving to a crowd.  You can use either sweet or spicy sausage – it’s great either way.

 Ingredients:

  • 1 package of bowtie pasta
  • olive oil
  • 1 pound Italian sausage 
  • 1/2 tsp. red pepper flakes
  • 1/2 c. diced onion
  • 2 tbsp. minced garlic
  • 28 oz. Italian style plum tomatoes – drained & chopped
  • 1.5 c. heavy cream
  • flour
  • 1/2 tsp. salt
  • fresh parsley

Directions:

  • Boil water & cook pasta using directions on the package
  • Heat olive oil in a skillet over medium heat & brown sausage

  •  Cut browned sausage into medallions and return to skillet – add onion, garlic & red pepper and cook until onion is tender

  • In a medium pot, transfer sausage mixture from skillet & add tomatoes, cream and salt.  Simmer for about 10 minutes or until sauce thickens (this is where you will need to add some flour – I always do)
  • Toss sauce & pasta together and top with fresh parsley
